Aspiring for more people to savor the daily pleasures of natural wine from Niki Town
Harbiose was coined from “harmony” and “symbiosis.” It embodies the winery’s philosophy of
thriving in harmony with the future, nature, the local community, and colleagues. In 2018,
they acquired and cultivated abandoned farmland in Asahidai, Niki Town, along the Yoichi
River. Planting commenced in 2019 with grape varieties Pinot Noir and Kerner. The cultivation
and winemaking processes are overseen by the parent-child duo, Kumiko Hattori and Aoi
Hattori, who moved here from Kyushu. In March 2022, they released their first vintage wine,
Bonbori, through contract winemaking. In October of the same year, they completed their
winery and embarked on a true Domaine experience, vinifying only grapes from their own
vineyard.
