At the foot of the majestic Mt. Yotei, which towers over Niseko Town, lies a winery dedicated
to cultivating grapes for sparkling wine through organic farming practices. These grapes are
then processed into wine at its adjoining facility. With only two wineries in all of Japan holding
organic certification, this winery’s white and rosé organic sparkling wines are of rare and
exceptional value. Crafted in the Champagne method with secondary fermentation in the
bottle and long-term aging, these wines transform into works of art, marked by a persistent
fizz of finely textured bubbles.
